L’AIL NOIR BLACK GARLIC
L’ail noir aurait pour origine le Japon. Depuis peu, ce produit singulier est disponible au Québec. On lui attribue des vertus thérapeutiques, notamment un effet antioxydant et antibactérien. Il serait également plus digeste et plus délicat que l’ail frais, tout en étant moins agressif. Son goût est un excellent exemple du fameux umami, la cinquième saveur, qu’on trouve notamment dans le parmesan, les tomates mûres et les produits de la mer. Black garlic is said to have originated in Japan. Recently, this singular product has become available in Quebec. It is said to have therapeutic properties, notably an antioxidant and antibacterial effect. It is also known to be more easily digested and more delicate than fresh garlic, offering a less aggressive flavour. Its taste is an excellent example of the famous “umami” taste, the fifth flavour, found in such foods as parmesan, ripe tomatoes, and seafood.
